Title
High-value valorisation of fruit side streams: engineering natural deep eutectic solvents for targeted polyphenol extraction (Research)
Abstract
Grape and pear pomace are significant fruit processing by-products rich in bioactive polyphenols. Currently, conventional extraction relies on toxic organic solvents, posing substantial environmental and health risks. Natural Deep Eutectic Solvents (NADES), mixtures of natural compounds, offer a promising sustainable alternative. In addition to being safe and biodegradable, NADES can be engineered to meet the specific physicochemical requirements of various applications.
This project proposes NADES-based polyphenol extraction as a high-value, green valorisation strategy. Unlike traditional research focused on maximising total phenolic yield, this study aims to maximise the extracts’ bioactivity. By selectively extracting the most bioactive polyphenols and enhancing their efficacy through synergistic solvent effects, the extracts will be optimised for nutraceutical and agricultural applications.
First, NADES components will be designed to maximise selectivity while maintaining industrial suitability. Next, the catalytic potential of acidic NADES will be investigated by developing a novel one-pot process that combines polyphenol extraction and deglycosylation, thereby increasing polyphenol bioactivity. To ensure process circularity, responsive NADES will be implemented for efficient solvent recycling and extract purification. Finally, these biocatalytic and recycling innovations will be integrated into extraction protocols suitable for industrial implementation.
